Lately, I was thinking how to change my blog a little. I’ve decided to focus more on Party Recipes. Therefore, probably in the next couple of months I will post more party recipes. Right now I have a head full of new ideas. While still I will have lots of other recipes as well.

We eat pancakes a lot at my home. Especially my children, they love them. Long time ago I was buying frozen pancakes. But I’ll tell you I hate frozen processed foods. I make everything from scratch. When I make lots of pancakes I freeze them so I can have it for couple of days or even weeks. It depends how often my children want them. I do the same with my waffles. I don’t buy them frozen anymore.

I’ve decided to incorporate everyday recipes into party style food. Like these mini pancakes. They are perfect for a Tea Party, Brunch or Princess Party. Instead of making large pancakes they can be served as mini version. Stack them together, decorate with whipped cream and peaches.

I don’t think that I ever made any peaches and cream recipes. So when I’ve noticed some recipes on my my Pinterest feed. I’ve decided to use my basket full of peaches from the fridge that I bought couple days ago.

Peaches and Cream Mini Pancakes {Party Style}

Ingredients

Pancakes

  • 1 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup cane sugar
  • 1/4 tsp. baking soda
  • 2 1/4 tsp. baking powder
  • 2 eggs
  • 1/4 cup unsalted butter melted
  • 2 cups buttermilk

Topping

  • 5 - 8 peaches sliced
  • 1/2 cup whipping cream
  • 1 Tbsp. confectioners sugar

Instructions

Pancakes

  • In a large bowl mix flours, sugar, baking soda and baking powder. Set aside
  • In a small bowl, whisk the eggs. Add buttermilk and melted butter. Whisk all ingredients together util well combined.
  • Pour the wet ingredients over the dry and mix with a wooden spoon delicately. But try not to over mix it.
  • Preheat the griddle or a skillet. Oil just a little the pan. Pour about 1 Tbsp. of the batter for each pancake. Cook on low-medium heat for about 1 - 2 minutes. When the batter starts bubbling flip on the other side and cook for another 1- 2 minutes.

Topping

  • Beat the whipping cream with confectioners sugar until soft peaks. Decorate pancakes with whipped cream and peaches.
