Mango Salsa Mini Cups

Delicious and easy to make healthy mango salsa made with only 4 ingredients and served in mini cups from chips. Great appetizer idea for a party!

While February is in full swing I am looking for some tropical fruit ideas that you can serve at parties. It is cold outside and we are looking for warmer months. Summer will be here soon:) Mango as a yummy fruit is great to be served sweet or with any types of veggies. I don’t usually mix fruits and veggies together in a salad. But I think I am missing something here: TASTE. I need to change this asap or my salads will become very boring……

For these mango salsa I used only 4 simple ingredients: mango, tomatoes, red onions and cilantro. I like cilantro and I can eat it all the time. The mango added a little sweetness while red onion added a little spice. I can tell it is great combination of flavors. You can also use hard mango but I like sweeten and ripen mango, so basically I awaited couple days until it will become more sweet. But the choice is yours and both ways are fine either. The mango salsa will be more sweet if you’ll use softer mango.

As simple as that, basically you chop all ingredients and mix them together. Add a little [easyazon_link identifier=”B01FT7T8XS” locale=”US” tag=”ilospas-20″]Himalayan salt[/easyazon_link] and pepper and voila the mango salsa is ready. Serve with chips scoops like [easyazon_link identifier=”B00KGU7RBY” locale=”US” tag=”ilospas-20″]Tostitos[/easyazon_link].

My only suggestions is not to top with mango salsa ahead of time. The best way is to just scoop salsa into the chips just before the party or during the party. After few hours chip can be become soggy.

Ingredients

  • 1 large tomatoes
  • 1 mango
  • 1/3 cup cilantro chopped
  • 1/4 cup red onion chopped
  • 1/8 tsp. salt
  • 30 chips scoops

Instructions

  • In a medium bowl mix all ingredients together. Season with salt and pepper. Fill each chips scoop just before the party or at the party. After few hours chips might become soggy. It can be served in a bowl and chips aside (Like salsa)
