Whether sweet or savory, these thin pancakes have been a part of French culture for centuries, with their origins dating back to the 13th century when they were first made in Brittany. Today, French crepes can be found on menus across the globe, from high-end restaurants to street vendors. Sweet crepes are very common in Poland, usually served for dinner with many types of fillings.

Ingredients Needed

Spinach, milk, flour, eggs, greek yogurt, diced mango.
  • Fresh Spinach – to add beautiful green color. You will not taste spinach.
  • Milk – cow’s milk will be the best for this recipe.
  • Eggs – to combine the batter.
  • All-Purpose Flour – this flour is the best for this recipe.
  • Oil – needed for frying crepes on the pan.
  • Cheese – farmers’ cheese, pressed cottage cheese etc.
  • Sugar – granulated white sugar to sweeten the cheese.
  • Greek Yogurt – or sour cream is need to make the cheese more softer and spreadable.
  • Mango – to mix with cheese.
  • Blueberries – for topping. Other berries can be used.

How to make French Crepes

This recipe is made with spinach while original sweet french crepes doesn’t contain spinach. However, you can omitt the spinach.

  1. (Full recipe below). Blend spinach with milk.
  2. In a large bowl mix eggs. Add spinach/milk mixture and flour. Mix with electric mixer until well combined
  3. Pour about 1/4 cup of batter to the frying pan.
  4. Cook on low – medium heat on each side.
  5. In another bowl mix cheese, sugar and greek yogurt until smooth, add diced mangoes.
  6. Spread each crepe with the filling. Fold in half, then again in half to form a triangle. Also, top it with fresh blueberries.

Crepe Fillings Sweet & Savory Ideas

  • Farmer’s cheese, cottage cheese, pressed cottage cheese, quark or cream cheese.
  • Fruit spreads, jams, preserves or confiture.
  • Maple syrup or honey.

  • Also, you can omit the spinach. You will have original recipe. However, I like how you can easily add nutritious and color naturally.
  • Farmer’s cheese substitute include: ricotta, cream cheese or cottage cheese. You can find Farmer’s cheese in European stores.
  • Also, you can use regular sugar instead of cane sugar. This is the type of sugar that I usually use in my kitchen.

Can crepes be frozen?

Yes, Crepes can be frozen, just remember to thaw them overnight in the fridge. You can heat them up on the pan, melt butter on the pan, put crepe and fry for few minutes on both sides. Microwave works great for heating up too. You can freeze already stuffed crepes.

Can French crepes be eaten cold?

Absolutely! They taste amazing cold and warm.

Can mango crepes be made ahead?

Yes you can make crepes ahead, store them in airtight container in the fridge for up to 5 days.

Ingredients

French Crepes

  • 1 cup fresh spinach
  • 1 cup milk
  • 2 eggs
  • 3/4 cup all-purpose flour
  • 3 Tbsp. vegetable oil

Crepes Filling

  • 1 cup farmer’s cheese or cottage cheese
  • 6 tsp. granulated sugar
  • 3 Tbsp. greek yogurt
  • 1 mango diced
  • 1/4 cup blueberries

Instructions

French Crepes

  • Blend spinach with milk in the blender until smooth.
    1 cup fresh spinach, 1 cup milk
  • In a large bowl mix eggs. Add spinach/milk mixture and flour. Mix with electric mixer until well combined.
    2 eggs, 3/4 cup all-purpose flour
  • Prepare frying pan and turn on the heat to low-medium, add some oil (not much) or best use Misto to sprinkle the oil on the pan.
    3 Tbsp. vegetable oil
  • Take about 1/4 cup crepes mixture and pour nicely on the heated pan. Move the pan around to spread the batter. Cook 1-2 minutes on one side, then flip and cook another 1-2 minutes.
  • Repeat the process until all crepes are cooked. Add a little oil each time if necessary.

Crepes Filling

  • In a medium bowl mix cheese with sugar and greek yogurt by spoon. If the cheese is to dry add some more greek yogurt.
    1 cup farmer’s cheese, 6 tsp. granulated sugar, 3 Tbsp. greek yogurt
  • Dice mango, set aside.
  • Spread equally farmer’s cheese on each crepe. Add some diced mango. Fold in half and in half again to form a triangle. Top it with few blueberries.
    1 mango, 1/4 cup blueberries

  3. You are very sweet!!!! I am really glad that I found your site. I love your recipes and have many of them marked to make it for later. My little one and I have been very sick for over a month. No appetite, lots of tea with honey and ginger, and warm milk with honey. The flu this year has been bad. I was also having a lot of dizziness and have been feeling weak to a point of exhaustion. I just thought that it was sleep deprivation but it turned out that my body is dangerously low in iron. So, as we’re slowly recovering. Your pictures look so good and appetizing that my little one agreed for me to make your smoothie and these pancakes for her. 🙂 Double yes, since it has a lot of spinach (iron).
