Cilantro Feta Cheese Mini Appetizer Sandwiches
Mini appetizer sandwiches perfect for any party gathering and healthy in some way. What a combination of cilantro and feta cheese. Both from different cuisines. By mixing different ingredients we can obviously make something new and exciting. Cilantro and feta cheese have a strong taste and by combining them I made an amazing mini appetizer. I can definitely eat them often.
I made them during the day on Sunday and I was happy with the end result. I am thinking I should make them often because they are so tasty. My husband said that they are good. He ate them quickly without leaving for me anything. But I am happy that he likes them.
These cilantro and feta cheese mini appetizer sandwiches can be eaten also for a breakfast or even lunch. However, if you omit baguette they are also perfect as a side for a dinner. Now I am thinking about new possibilities, it will go nicely with an Easy Lemon Rosemary Salmon or with a Pork Chop. Either way is fine, they are delicious anyway:))
If you are thinking about party for the next couple of weeks consider making these mini appetizer sandwiches. Believe me they are so easy and quick to do. Everyone can grab their own little sandwich topped with feta cheese, tomatoes and cilantro. Just couple of simple ingredients and sandwiches can be made easily.

Cilantro Feta Cheese Mini Appetizer Sandwiches
Ingredients
- 1 baguette
- 2 medium-sized tomatoes
- 1/4 cup chopped green onions
- 3/4 cup chopped feta cheese
- 1 Tbsp. olive oil
- 1/4 cup chopped cilantro
- Salt optional
- Pepper
Instructions
- Preheat oven to 350 F.
- Cut baguette into slices and lay nicely on the baking pan.
- Bake for 10 minutes. Remove from oven.
- Wash and dice tomatoes, mix with green onions, feta cheese, olive oil and cilantro. Add salt/pepper to taste.
- Place prepared salad on each slice of baguette.
